Grapefruit Cake
4 oz butter 4 oz sugar 1 dsp oil 2 eggs 6 oz self raising flour juice from 1 grapefruit
Cream butter and sugar. Add eggs, then oil and juice. Beat well. Add flour. 175°C for 25 minutes.
Works OK for cupcakes, too.

We had leftover Crockpot Apple Porridge, so I used it to make Porridge Buns. I added a big wallop of cinnamon, and they came out so delicious. Breaking them open when warm was like a big puff of donut-scented air. They are so simple to make.

Currently baking is a Feijoa Loaf, which I haven't made before. Will be interesting to see how it comes out. It was too small for my (large-ish) loaf tin, so use a small tin if you have it.

Last night I in this order
Put a table spoon of rice oil in a small roasting dish (actually a old square cake tin) I added a handful of baby button mushrooms halved 5 whole cloves of garlic 3 chicken breasts 2 roughly chopped fresh tomatoes A dash or two of Masterfoods Sumac A dash of Masterfoods chilli flakes A dash or two of Masterfoods Herbs de Provence I covered the dish in tin foil and cooked at 180 for half an hour (till chicken juice was clear) Then for the last 10 – 15 minutes of cooking I took the tin foil off And served with lettuce, carrots and spring onions, to which my son sprinkled Masterfoods lemon pepper to.
It was good enough for me to share with you :o)

I just made these cute wee mince baskets (with homemade wedges and salad) and they are GREAT. Bubba loves them, too. It's just a different way of serving that tomato mince mix that everyone seems to make.
Last night we made mustard roast beef, from the Babies and toddlers section. We all enjoyed it!

I make this at every family thing - so simple, so yummy :)
Ingredients: 1kg yogurt - I use berry flavour for colour 500ml whipping cream 2 cans fruit salad 1 bag fruit puffs 1 bag marshmallows any extra fruit - I usually use grapes, bananas, or pineapple
Method: This is WAY nicer if you let the marshmallows soften first, so I mix them with the fruit puffs and the yoghurt the night before serving it, and refridgerate. The next day, whip cream and add to yoghurt. Drain fruit and mix in. Easy as that!!

Chocolate Toffee Bars
8 oz butter 1 cup brown sugar 1 egg yolk 1 tsp vanilla 2 cups flour 1 cup walnuts 1 cup chocolate chips Cream butter and sugar. Add egg and vanilla. Add dry ingredients. 180°C for 15-20 minutes.

Those of you on my friends list will know that I'm working on a recipe book for my family for Christmas. However, I have far fewer muffin recipes than anything else, and would like to even it out a bit.

Truffles
4 Tbsp butter vanilla 3 Tbsp cocoa 4 Tbsp milk 12 Tbsp milk powder 8 Tbsp sugar coconut
Place butter, sugar and milk into pot and heat until the butter and sugar are melted. Add to the milk powder and cocoa. Stir in vanilla. Allow to cool a little then roll spoonfuls in coconut. Set in fridge.
Variations: Add sultanas or walnuts to the mixture. Form the truffle with a caramel chocolate in the centre.

| Tasty Chickpeas |

This recipe is so simple, but so delicious.
1 can chickpeas (or cannellini beans) 1 Tbsp oil 1 tsp cumin 1 tsp ground coriander seed 1/2 tsp salt
Drain and rinse chickpeas or beans. Heat oil in a frying pan. Add spices. Stir for a little bit. Add chickpeas. Fry until the skins start to go a wee bit crispy, they're going a bit brown, and the spices are coating them.
If served with rice (and veges), makes a good cheap meat-free meal.

Easy gingerbread cookies
Ingredients 125g butter or margarine 2 tablespoons golden syrup 185g sugar 1 egg, beaten 315g self raising flour 1/4 teaspoon salt 2 teaspoons ground ginger
Directions • Grease oven tray • Melt butter and golden syrup in saucepan, then add the sugar and the egg. • Lastly, add the sifted flour, salt and ginger. Mix well. • For gingernuts, drop in teaspoonfuls on to tray. For gingerbread men, mould into shape or use cutter, and make faces with currants and peel. • Bake at 165 ° C until a delicate golden brown, approx. 10-12 minutes.

| THE best chicken casserole ever |

This recipe is famous in my family. It makes the best chicken casserole EVER.
Size 8 or 9 chicken 1 packet Maggi mushroom soup 1 1/4 cups cold water 1/2 cup cream 1 Tbl sherry salt & pepper 4 slices multigrain bread small onion plenty of parsley and fresh herbs butter (not sure how much- couple of big tablespoons?)
Cook chicken in microwave in an oven bag for 25 - 30 minutes. Bone out chicken and put in casserole dish.
Mix soup and water and bring to the boil for 2 minutes. Cool. Add cream, sherry and salt and pepper and pour over chicken.
Toast the bread. Whiz the toast into breadcrumbs with the onion and herbs. Melt butter and bind into topping. Sprinkle thickly over chicken.
Cover and cook for 30 mins at 180 degrees, or until heated and bubblnig right through.

Ingredients:
Jam or Golden Syrup 50g butter ¼ cup sugar 1 egg 1 cup flour 1 teaspoon baking powder ½ cup milk
Method:
Lightly grease 4 coffee mugs and put a large spoonful of jam or syrup in the base of each. Melt butter in a bowl, add sugar and egg, beat well. Beat in milk. Sift in flour and baking powder and mix well.
Spoon evenly into mugs and microwave on high for 3-4 minutes. Stand for 1 minute then tip upside down on a plate. Serve with cream.

Ingredients:
4 egg whites Pinch baking powder 1 cup sugar 1 teaspoon vinegar 1 teaspoon vanilla essence 1 Tablespoon cornflour
Method:
Preheat oven to 180°C Beat eggwhites until stiff. Add baking powder & beat again. Gradually add sugar (still beating). Mixture should be glossy and thick. Beat in remaining ingredients.
Pour onto a lined tray and shape until it's nice and round. Turn off oven. Put in oven and leave in with the door shut until the oven is cold.
Decorate with cream and fruit =)

Ingredients:
6oz butter 1 cup sugar 1 egg 1 packet Greggs Instant Pudding mix (i used chocolate but apparently butterscotch is good) 3 Tablespoons cornflour 1 ½ cups flour 1 teaspoon baking powder
Method:
Beat butter & sugar, then beat in egg, then instant pudding mix. Sift in flour, cornflour & baking powder and mix well. Knead if necessary. Roll into small balls & press with a fork. Bake for approx 10 mins at 190°C (375°F)

| THE BEST PUMPKIN SOUP EVER |

Again i have no set measurements for this. but this is how i make it. Ingredients: 1 whole pumpkin ( size depends on much people you have to fed) Around 1 tablespoon of brown sugar " of crushed garlic " of mild curry Around 2 tablespoon of chicken stock about a cup of cheese sauce
Method: Cut pumpkin into small chunks put in a large like a stock pot, cover with water not to much. And then add all the brown sugar, garlic, curry and chicken stock, you add more or less depending on what you like. cook that till it boils and simmer till pumpkin is cooked. DONT tip water out, mash everything together. then add cheese sauce. simple. doesnt take very long at all. And it always tastes better the next day - dont know why. Hope you like. everyone in my family LOVE IT.
