Update Product Forge extension to v1.7.0

Updates the existing product-forge community catalog entry from v1.6.0 to v1.7.0, per the submission in #2967.

Changes

• extensions/catalog.community.json: bumped version, download_url, description, documentation, tags, and updated_at for product-forge (preserved created_at, downloads, stars).
• docs/community/extensions.md: refreshed the Product Forge row description.

Validation

• ✅ Repository public; extension.yml, README.md, LICENSE present
• ✅ GitHub release v1.7.0 exists ("Ivysaur")
• ✅ Download URL returns HTTP 200 and follows archive/refs/tags/vX.Y.Z.zip
• ✅ Extension ID is lowercase-with-hyphens; version is semver
• ✅ Submission checklists all checked
• ✅ catalog.community.json parses as valid JSON

Note: the issue was filed as a new extension, but product-forge already exists in the catalog (added at v1.6.0), so this is handled as an in-place update.
