About the bit at the end...
Yeah, surveillance pricing isn't about charging more money to those who can afford it, it's screwing people with less options. A person living in a rich person looking at doordash probably has other ready to eat food in the kitchen, a car, etc.
Before internet shopping took off, a major issue of poverty was people who lived in inner cities being charged prices for diapers that the rich people out in the burbs would never, ever pay. Internet shopping took hold because it disrupted that system, and now it's recreated it.

It's not the rich people are frugal, it's more complicated than that.
This is one of many reasons why I can't discuss capitalism or why rich people do the things they do with most people. Or how horny rich people can be for free things (accurately portrayed in Crazy Rich Asians, the movie at least I didn't read the book)

People with money can keep out new big stores and the associated parking lots, traffic and also people coming into their area for specialty shopping. Okay, I'll stop before I explain the whole Two Buck Chuck marketing strat.
